Discovering Joy and Inclusion at Wicked Waffles: A Gluten-Free Delight

Every now and then life treats me to an experience that I know will last for the rest of my days, existing as blissful reminder that this sullen world still holds much warmth, love and kindness.

When learning that this is a review of a food truck, you may think to yourself, “whoa! Gear down big rig, it’s just food.” And that’s fine. I get it. But I raise you this — food is essential to life, is it not? Bear with me…

This last weekend I had my first experience with Wicked Waffles. Slapped to the side of the prodigious blue truck were two signs that read, “celiac friendly,” and “gluten free.” This was huge! Not to me, but for the mini human I was with. Her name is Olivia, and she was diagnosed as Type 1 diabetic at age 5, and a few short years later as celiac. To say that the dietary norms of a zealous child have to be curtailed and culinary expectations on family outings mitigated is a woeful understatement.

When she read those two signs her face lit up and she legitimately jumped up and down with excitement. It’s as though the truck was there just for her. This was nourishment for the soul. Next came the fun for our bellies.

Wicked Waffels is hands down THE best waffle I have ever eaten IN MY LIFE! No exaggeration. No hyperbole. And no, I’m not a paid actor (I’m not handsome nor talented enough for that). I’m just a grateful guy expressing his views about fabulous food truck experience.

I truly mean it — the food was magnificent. The chicken was breaded by an in-house gluten free flour and seasoned to delight. Everything felt airy and satisfying bite after bite.

Watching Olivia devour her food without worry was equally as enjoyable to dine on.

The staff are all polite, cordial and knowledgeable. They make you feel like a friend, not a customer — and that’s a hard thing to pull off. I believe it’s because they are as authentic as the food they serve. This is undeniably one of the most fulfilling and memorable experiences I have had with a food truck. And it’s right here in Vernon! Amazing.

10/10 will be back.
